You better hope you do, because this little dish makes me quite happy. (And if you could loan me a banana that would be awesome.) I ran across a version of this while wandering around the Eating Asia blog looking for some sun filled inspiration to break up my blizzard. I found it, a mention of a banana, coconut & sweet sticky rice breakfast. I used my new best friend (apologies to my old best friend) to turn it into dessert. But you could omit the sugar and Kahlua and turn it into breakfast again.
I think you could also use pineapple, apple, pear or plum with good results as well. I will be trying these soon…
1 c sticky rice
1 can coconut juice (not milk)
1 T butter
1 T Kahlua
1 t sugar
1 pinch cinnamon
2 bananas, cut in half lengthwise
Cook rice in coconut juice. When the rice is done, cover and set aside. Heat butter in a saute pan over medium high heat. When butter is almost melted add in Kahlua, sugar and cinnamon and stir together. Place bananas cut side down and cook until brown, about 2 minutes. Turn over and cook other side until brown, about 2 minutes. Plate single with rice and sprinkle with coconut.
