As tasty as it is healthy…

Freaky combo, eh? This is a near perfect dish for entertaining. It takes less than 10 minutes actual working time to make, can be served warm or cold, can be prepared last minute or days before, is healthy and is tasty enough that people won’t notice.

Sun Dried Tomato Dip


3 oz sundried tomatoes, not packed in oil
1/3 cup fresh basil leaves
15 oz can white beans (soy, garbanzo, great northern), drained
3 garlic cloves minced
2 Tbsp. balsamic vinegar
2 T tomato paste
1 T olive oil
coarse salt to taste
pepper to taste

Combine tomatoes and 1 cup boiling water in a bowl; let stand 15 minutes or until soft. Drain tomatoes in a sieve over a bowl, reserving ½ cup soaking liquid.

Toss tomatoes and remaining ingredients in a food processor; process until smooth-ish adding in soaking liquid until dip reaches desired consistancy. Refridgerate if you aren’t serving immediately. Serve with pita chips.
