I really love the tastes of this one. They’re so nice. Warm, sweet, salty and gorgozola-y; many times over, freakin’ yum. You can bake the pitas and the gorgonzola separately and then top the prosciutto with gorgonzola that has been baked in a dish separately. It’s a bit prettier this way, but I wrote it out the faster way.
Prosciutto Pita Sandwiches
1/4 lb prosciutto, thinly sliced
4 oz Gorgonzola
Preheat oven to 350°f.
Cut the pitas into 8 triangular wedges. Place on a cookie sheet and bake for 5 minutes or until crisp place 1 inch slices of cheese on the pita wedges and bake for 5 more minutes or until melted and browning. Cut prosciutto slices to the size of the pitas. Warm honey in microwave.
Assemble sandwiches by placing some prosciutto slices on a pita. Drizzle with warm honey. Serve warm.
