I’ll Snickerdoodle You!

I happen to really enjoy snickerdoodles. But sometimes they are a little blandish. I created this recipe to have a bit more depth of flavor by adding cream cheese for creaminess and vinegar for contrast. These are not your average snickerdoodles, cuz I’m not your average girl.

1/2 c butter
1/2 c shortening
2 eggs, lightly beaten
2oz cream cheese, at room temp
1 T vinegar
1 t vanilla

1 1/2 c sugar
3 c flour
2 t cream of tartar
1 t baking soda
1/2 t salt

3 T sugar
1 1/2 T cinnamon

Cream butter, shortning and sugar. Add eggs, cream cheese, vinegar and vanilla. Sift dry ingredients (except for sugar and cinnamon) together and combine. Chill dough a couple of hours or overnight.

Preaheat oven to 400°f Mix sugar and cinnamon together. Roll dough to size of walnuts and coat in cinnamon sugar. Transfer to parchment paper lined cookie sheet and press flat with your fingers or a glass. Bake 8 – 12 minutes. Do not over-bake. With my oven and the size of the cookies that I make it takes 11 minutes. They are done when they are no longer shiny in the cracks. Rest on baking sheet for 1 minute, then transfer to a cooling rack.
